Moist Banana Cake

Ingredients
- 4 A-sized eggs (250 g in total)
- 150 g sugar
- 180 g vegetable oil
- 250 g Cavendish bananas (approx. 3 bananas)
- 180 g plain flour
- 1 tsp baking soda
- 1 tsp baking powder
Instructions
- Preheat your oven to 170°C. Grease and flour a 20x10 cm (8x4 inch) loaf tin, or line with baking paper, and set aside.
- Add 180 g plain flour, 1 tsp baking soda, and 1 tsp baking powder to the clean Thermomix bowl. Mix 10 sec / Speed 4. Transfer the dry ingredients to a separate bowl and set aside.
- Add 250 g Cavendish bananas to the Thermomix bowl. Mash 5 sec / Speed 4. Scrape down the sides of the bowl. If needed, mash again for 3 sec / Speed 4 until mostly smooth. Transfer the mashed bananas to the bowl with the dry ingredients and set aside.
- Insert the butterfly whisk into the clean Thermomix bowl. Add 4 eggs and 150 g sugar. Whisk 3 min / Speed 4 until light and fluffy.
- Remove the butterfly whisk. Add 180 g vegetable oil and the mashed bananas to the bowl. Mix 10 sec / Speed 3.
- Add the reserved dry ingredients (flour mixture) to the bowl. Mix 15 sec / Speed 3, or until just combined. Scrape down the sides of the bowl and mix for another 5 sec / Speed 3 if needed. Be careful not to overmix the batter.
- Pour the batter into the prepared loaf tin. Bake in the preheated oven for 60 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let the cake cool in the tin for 10-15 minutes before carefully transferring it to a wire rack to cool completely.
- Slice and serve your moist banana cake.
