Ingredients

Instructions

  1. Preheat your oven to 180°C (350°F). Grease and flour a 23 cm (9-inch) loaf tin or an equivalent cake pan, or line with baking paper.
  2. Add 250 g Cavendish bananas to the clean, dry mixing bowl. Chop 3 seconds / Speed 4. Scrape down the sides of the bowl. Transfer the mashed bananas to a separate bowl and set aside.
  3. Add 180 g plain flour, 1 tsp baking soda, and 1 tsp baking powder to the mixing bowl. Mix 5 seconds / Speed 4. Transfer the dry ingredients to a separate bowl and set aside.
  4. Insert the butterfly whisk into the clean mixing bowl. Add 4 large eggs and 150 g granulated sugar. Whisk 3 minutes / Speed 4, or until light and fluffy.
  5. Remove the butterfly whisk. Add 180 g vegetable oil to the bowl. Mix 10 seconds / Speed 3, ensuring the oil is well incorporated.
  6. Add the reserved mashed bananas and the reserved dry ingredients to the mixing bowl. Mix 15 seconds / Speed 3, or until just combined. Scrape down the sides of the bowl with the spatula and mix for another 5 seconds / Speed 3 if needed. Be careful not to overmix the batter.
  7. Pour the cake batter into the prepared loaf tin. Bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean. Baking time may vary depending on your oven.
  8. Once baked, remove the cake from the oven and let it cool in the tin for 10-15 minutes before transferring it to a wire rack to cool completely. This helps prevent the cake from sticking and ensures a moist texture.
