Ingredients
- 250 g Cavendish bananas (approx. 3 medium)
- 180 g plain flour
- 1 tsp baking soda
- 1 tsp baking powder
- 4 large eggs (approx. 250 g total)
- 150 g granulated sugar
- 180 g vegetable oil
Instructions
- Preheat your oven to 180°C (350°F). Grease and flour a 23 cm (9-inch) loaf tin or an equivalent cake pan, or line with baking paper.
- Add 250 g Cavendish bananas to the clean, dry mixing bowl. Chop 3 seconds / Speed 4. Scrape down the sides of the bowl. Transfer the mashed bananas to a separate bowl and set aside.
- Add 180 g plain flour, 1 tsp baking soda, and 1 tsp baking powder to the mixing bowl. Mix 5 seconds / Speed 4. Transfer the dry ingredients to a separate bowl and set aside.
- Insert the butterfly whisk into the clean mixing bowl. Add 4 large eggs and 150 g granulated sugar. Whisk 3 minutes / Speed 4, or until light and fluffy.
- Remove the butterfly whisk. Add 180 g vegetable oil to the bowl. Mix 10 seconds / Speed 3, ensuring the oil is well incorporated.
- Add the reserved mashed bananas and the reserved dry ingredients to the mixing bowl. Mix 15 seconds / Speed 3, or until just combined. Scrape down the sides of the bowl with the spatula and mix for another 5 seconds / Speed 3 if needed. Be careful not to overmix the batter.
- Pour the cake batter into the prepared loaf tin. Bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean. Baking time may vary depending on your oven.
- Once baked, remove the cake from the oven and let it cool in the tin for 10-15 minutes before transferring it to a wire rack to cool completely. This helps prevent the cake from sticking and ensures a moist texture.
