Matcha Macadamia Cookies

Ingredients
- 100 g raw macadamia nuts
- 200 g plain flour
- 10 g matcha powder
- 1 tsp baking soda
- 0.5 tsp salt
- 115 g unsalted butter, softened, cut into pieces
- 100 g granulated sugar
- 80 g light brown sugar
- 1 large egg
- 1 tsp vanilla extract
- 100 g white chocolate chips (optional)
Instructions
- Preheat oven to 180°C (350°F). Line two baking sheets with parchment paper.
- Add macadamia nuts to a clean, dry mixing bowl. Chop 3 sec / Speed 5. Transfer to a separate bowl and set aside.
- Add plain flour, matcha powder, baking soda, and salt to the mixing bowl. Mix 10 sec / Speed 3. Transfer to a separate bowl and set aside.
- Insert the butterfly whisk. Add softened butter, granulated sugar, and light brown sugar to the mixing bowl. Cream 2 min / Speed 3.5.
- Add the egg and vanilla extract to the bowl. Mix 30 sec / Speed 3.
- Remove the butterfly whisk. Add the reserved dry ingredient mixture to the bowl. Mix 15 sec / Speed 3 until just combined. Do not overmix.
- Add the chopped macadamia nuts and white chocolate chips (if using) to the dough in the bowl. Use the spatula to gently fold them in for 10 sec / Reverse / Speed 2.
- Chill the cookie dough in the refrigerator for at least 30 minutes. This helps prevent spreading.
- Scoop rounded tablespoons of dough onto the prepared baking sheets, leaving about 5 cm (2 inches) between each cookie.
- Bake for 10-12 minutes, or until the edges are lightly golden and the centers are still slightly soft. Do not overbake.
- Remove from the oven and let cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.
