Light Garden Vegetable and Edamame Soup

Ingredients
- 150 g onion, quartered
- 2 cloves garlic
- 20 g olive oil
- 150 g carrots, peeled and cut into 1 cm pieces
- 200 g mushrooms, quartered
- 800 g vegetable stock
- 100 g green beans, trimmed and halved
- 150 g shelled edamame (frozen is fine)
- ½ tsp salt, or to taste
- ¼ tsp black pepper, or to taste
- 10 g fresh parsley, chopped (optional, for garnish)
Instructions
- Place onion and garlic in the Thermomix bowl. Chop 5 sec / Speed 5. Scrape down the sides of the bowl.
- Add olive oil to the bowl. Sauté 5 min / 120°C / Speed 1. Ensure the measuring cup is removed and the simmering basket is placed on the lid to prevent splatter and allow evaporation.
- Add carrots and mushrooms to the bowl. Sauté 3 min / 120°C / Speed 1 / Reverse. Scrape down the sides of the bowl.
- Pour in the vegetable stock, salt, and pepper. Add green beans and edamame. Cook 15 min / 100°C / Speed 1 / Reverse. Place the simmering basket on the lid instead of the measuring cup.
- Pause the machine, carefully remove the simmering basket, and scrape down the sides and bottom of the bowl with the spatula. Check the thickness and adjust liquid if needed. Replace the simmering basket.
- Continue cooking 5 min / 100°C / Speed 1 / Reverse.
- For the last 1-2 minutes, reduce temperature to 90°C and maintain Speed 1 / Reverse to settle and prevent sticking. (e.g., 2 min / 90°C / Speed 1 / Reverse).
- Taste and adjust seasoning if necessary. Serve hot, garnished with fresh parsley if desired.
