Lemon Herb Chicken and Asparagus Risotto

Ingredients
- 1 large onion, quartered
- 2 cloves garlic
- 30 g olive oil
- 400 g chicken breast, diced into 2 cm pieces
- 300 g Arborio rice
- 100 g dry white wine (optional)
- 1000 g hot chicken stock (ensure gluten-free if needed)
- 1 lemon, zest only
- 1/2 tsp salt
- 1/4 tsp black pepper
- 250 g green asparagus, woody ends trimmed, cut into 3 cm pieces
- 50 g Parmesan cheese, grated
- Juice of 1/2 lemon
- 2 tbsp fresh parsley, chopped
- 1 tbsp fresh chives, chopped
Instructions
- Add onion and garlic to the mixing bowl. Chop 5 sec / Speed 5. Scrape down sides of bowl.
- Add olive oil. Sauté 3 min / 120°C / Speed 1.
- Add diced chicken breast. Cook 7 min / 120°C / Reverse / Speed 1. Remove chicken and set aside, leaving any oil in the bowl.
- Add Arborio rice to the mixing bowl. Toast 2 min / 100°C / Reverse / Speed 1, without the measuring cup.
- If using, add white wine. Cook 1 min / 100°C / Reverse / Speed 1, without the measuring cup, to allow alcohol to evaporate.
- Add hot chicken stock, lemon zest, salt, and pepper to the bowl. Insert the simmering basket onto the lid instead of the measuring cup to prevent splatter and allow evaporation.
- Cook 10 min / 90°C / Reverse / Speed 1.5.
- Pause the machine. Scrape down the sides and bottom of the mixing bowl with the spatula. Check the consistency and add a splash more hot stock if it seems too dry.
- Add the cut asparagus pieces. Continue to cook 10 min / 90°C / Reverse / Speed 1.5, with the simmering basket on the lid.
- Add the cooked chicken back into the bowl. Add grated Parmesan cheese, fresh lemon juice, chopped parsley, and chives. Cook 2 min / 90°C / Reverse / Speed 1, with the simmering basket on the lid, to combine and finish.
- Transfer the risotto to a serving dish immediately. Let it rest for 2-3 minutes before serving to allow it to settle and become extra creamy. Serve hot.
