Ingredients
- 300 g basmati rice (or other long-grain rice)
- 800 g water
- 1 small onion (approx. 80g), quartered
- 10 g olive oil
- 20 g vodka
- 100 g tomato sauce (passata or crushed tomatoes)
- 100 g drained pineapple chunks
- 50 g milk
- 40 g hummus (approx. 2 tablespoons)
- Salt, to taste
- Black pepper, to taste
- 150 g lettuce, washed and roughly torn
- 2 cherry tomatoes, halved
Instructions
- Place rice in the simmering basket and rinse thoroughly under cold running water. Set aside.
- Add 800 g water to the mixing bowl. Insert the simmering basket with the rinsed rice. Cook 18 min / 100°C / Speed 4.
- Carefully remove the simmering basket with the aid of the spatula and set aside to drain. Empty the mixing bowl.
- Add the quartered onion to the mixing bowl. Chop 3 sec / Speed 5. Scrape down the sides of the bowl with the spatula.
- Add 10 g olive oil. Sauté 3 min / 120°C / Speed 1.
- Add 20 g vodka. Cook 2 min / 100°C / Speed 1, with the simmering basket placed on the lid instead of the measuring cup, to allow the alcohol to evaporate.
- Add 100 g tomato sauce, 100 g drained pineapple chunks, 50 g milk, 40 g hummus, salt, and pepper to the mixing bowl. Cook 8 min / 95°C / Speed 2 (Reverse), with the simmering basket on the lid to prevent splatter and allow for evaporation.
- Add the cooked rice to the mixing bowl with the sauce. Mix gently 30 sec / Speed 2 (Reverse) to combine.
- Serve immediately, topped with fresh, torn lettuce and halved cherry tomatoes.
