Kerala Biryani Masala Powder

Ingredients
- 50 g whole coriander seeds
- 25 g whole cumin seeds
- 15 g whole fennel seeds
- 10 g black peppercorns
- 15 g green cardamom pods
- 8 g whole cloves
- 10 g cinnamon sticks (approx. 2-3 sticks, broken into pieces)
- 5 g star anise (approx. 2 whole stars)
- 5 g whole nutmeg (approx. 1 whole nut)
- 2 g mace blades (approx. 2-3 blades)
- 2 g dried bay leaves (approx. 3-4 leaves)
- 5 g dried ginger (sundh), optional
Instructions
- Ensure the Thermomix mixing bowl is completely clean and dry before starting.
- Add all the whole spices (coriander seeds, cumin seeds, fennel seeds, black peppercorns, green cardamom pods, cloves, cinnamon sticks, star anise, whole nutmeg, mace blades, dried bay leaves, and dried ginger if using) into the mixing bowl.
- Secure the lid with the measuring cup in place.
- Grind the spices for 1 minute / Speed 10. Scrape down the sides of the bowl with the spatula.
- Grind again for another 30 seconds / Speed 10, or until a very fine powder is achieved. Check the consistency and repeat if necessary.
- Transfer the freshly ground Kerala Biryani Masala Powder to an airtight container. Allow it to cool completely before sealing.
