Indonesian Chicken Satay with Creamy Peanut Sauce

Ingredients
- 600 g boneless, skinless chicken thighs, cut into 2 cm cubes
- 12-16 bamboo skewers, soaked in water for at least 30 minutes
- 1000 g water (for steaming)
- For the Chicken Marinade:
- 50 g shallots, peeled
- 2 cloves garlic, peeled
- 15 g fresh ginger, peeled
- 1 stalk lemongrass, white part only, roughly chopped
- 10 g fresh galangal, peeled (or extra ginger if unavailable)
- 1 tsp ground turmeric
- 1 tsp ground coriander
- 1 tsp ground cumin
- 1 tbsp brown sugar
- 1 tbsp fish sauce (or soy sauce for a non-fish option)
- 20 g vegetable oil
- For the Creamy Peanut Sauce:
- 150 g roasted peanuts, unsalted, skinless
- 30 g shallots, peeled
- 1 clove garlic, peeled
- 1 red chili, deseeded and roughly chopped (or to taste)
- 10 g vegetable oil
- 200 g full-fat coconut milk
- 1 tbsp tamarind paste
- 1 tbsp brown sugar
- 1 tbsp soy sauce (or tamari for gluten-free)
- 1 tbsp lime juice
- 50-100 g water (adjust for desired consistency)
- For Serving:
- 1 red onion, thinly sliced
- 100 g cabbage, shredded
- 2 spring onions, chopped (for garnish)
- 1 tbsp crushed roasted peanuts (for garnish)
- 2 limes, cut into wedges
Instructions
- **Prepare the Chicken Marinade:** Add shallots, garlic, ginger, lemongrass, galangal, turmeric, coriander, and cumin to the clean Thermomix bowl. Chop 5 sec / Speed 7. Scrape down sides of bowl.
- Add 20 g vegetable oil to the bowl. Sauté 5 min / 120°C / Speed 1. Scrape down sides.
- Add brown sugar and fish sauce to the bowl. Blend 10 sec / Speed 7 to form a smooth paste. Transfer the marinade to a large bowl and set aside.
- Add the chicken cubes to the marinade, ensuring all pieces are well coated. Cover and refrigerate for at least 30 minutes, or preferably 2-4 hours.
- **Prepare the Chicken Skewers:** Thread the marinated chicken pieces onto the soaked bamboo skewers. Arrange the skewers in the Varoma dish and Varoma tray, ensuring some gaps for steam to circulate. Set aside.
- **Prepare the Creamy Peanut Sauce:** Add 150 g roasted peanuts to the clean Thermomix bowl. Chop 5 sec / Speed 6. Transfer half of the chopped peanuts to a small bowl for garnish and set aside. Keep the remaining peanuts in the bowl.
- Add 30 g shallots, 1 clove garlic, and red chili to the bowl with the remaining peanuts. Chop 5 sec / Speed 7. Scrape down sides of bowl.
- Add 10 g vegetable oil to the bowl. Sauté 5 min / 120°C / Speed 1. Scrape down sides.
- Add coconut milk, tamarind paste, brown sugar, soy sauce, and lime juice to the bowl. Cook 15 min / 95°C / Speed 2 (Reverse). Place the simmering basket on the lid instead of the measuring cup to prevent splatter and allow for some evaporation.
- Pause, scrape down the sides and bottom of the bowl with the spatula. Check consistency and add 50-100 g water if a thinner sauce is desired. Continue cooking for another 5 min / 95°C / Speed 2 (Reverse).
- For the final minute, cook 1 min / 90°C / Speed 1 (Reverse) to settle and prevent sticking. Transfer the peanut sauce to a serving bowl.
- **Steam the Chicken Skewers:** Clean the Thermomix bowl. Add 1000 g water to the bowl. Place the Varoma dish with the chicken skewers onto the Thermomix lid. Steam 20-25 min / Varoma / Speed 2. The cooking time will depend on the thickness of the chicken pieces.
- **Finish the Chicken (Optional for Charring):** For authentic charring, preheat a grill or broiler to medium-high. Carefully transfer the steamed chicken skewers to the grill or a baking tray. Grill or broil for 3-5 minutes per side, or until lightly charred and cooked through. Alternatively, pan-fry the steamed skewers in a little oil until browned.
- **Serve:** Arrange the chicken satay skewers on a serving platter with the creamy peanut sauce, sliced red onion, shredded cabbage, and lime wedges. Garnish with chopped spring onions and the reserved crushed peanuts. Serve immediately.
