Indian Yellow Dal Tadka with Fragrant Basmati Rice

Ingredients
- 200 g yellow split lentils (Toor Dal or Moong Dal), rinsed
- 800 g water (for dal)
- 0.5 tsp ground turmeric
- 1 tsp salt (for dal)
- 30 g vegetable oil (or ghee for non-vegan)
- 1 tsp cumin seeds
- 0.5 tsp mustard seeds
- 2-3 dried red chilies, whole
- 0.25 tsp asafoetida (hing)
- 100 g onion, quartered
- 2 cloves garlic
- 10 g fresh ginger, peeled
- 1-2 green chilies, deseeded if preferred
- 150 g ripe tomatoes, quartered
- 0.5 tsp red chili powder (or to taste)
- 0.5 tsp garam masala (optional)
- Fresh coriander, chopped, for garnish
- 200 g basmati rice, rinsed
- 1000 g water (for rice)
- 0.5 tsp salt (for rice)
Instructions
- Rinse the yellow split lentils thoroughly under cold water until the water runs clear. Set aside.
- Add the rinsed lentils, 800 g water, ground turmeric, and 1 tsp salt to the mixing bowl. Cook 25 min / 100°C / Speed 1 / Reverse.
- After 15 minutes, pause the Thermomix, scrape down the sides and bottom of the bowl with the spatula to ensure even cooking and prevent sticking. Continue cooking.
- Once cooked, carefully transfer the dal to a separate bowl and set aside. Rinse the mixing bowl.
- Add 1000 g water and 0.5 tsp salt to the clean mixing bowl. Place the rinsed basmati rice into the simmering basket and insert it into the mixing bowl.
- Cook 20 min / Varoma / Speed 4. Carefully remove the simmering basket, fluff the rice with a fork, and set aside.
- Rinse the mixing bowl again. Add 30 g vegetable oil, cumin seeds, mustard seeds, and dried red chilies to the clean mixing bowl. Sauté 3 min / 120°C / Speed 1 / Reverse.
- Add asafoetida, onion, garlic, ginger, and green chilies to the bowl. Chop 3 sec / Speed 5. Scrape down the sides of the bowl with the spatula.
- Sauté 5 min / 120°C / Speed 1 / Reverse.
- Add quartered tomatoes, red chili powder, and optional garam masala to the bowl. Cook 5 min / 100°C / Speed 1 / Reverse.
- Add the cooked dal back into the mixing bowl with the tempering mixture. Mix 2 min / 90°C / Speed 1 / Reverse.
- Serve the hot Dal Tadka garnished with fresh chopped coriander, alongside the fragrant Basmati rice.
