Homemade Quince Paste

Ingredients
- 1 kg quinces, peeled, cored, and cut into 3-4 cm chunks
- 500 g granulated sugar
- 50 g water (optional, for initial cooking)
Instructions
- Ensure the Thermomix bowl is clean and dry. Add the peeled, cored, and chunked quinces to the mixing bowl.
- Chop the quinces for 5 seconds / Speed 5. Scrape down the sides of the bowl with the spatula.
- Add the granulated sugar and the 50 g water (if using) to the bowl. The water helps prevent sticking as the quinces release their liquid.
- Cook for 30 minutes / 95°C / Speed 2 / Reverse. Place the simmering basket on the lid instead of the measuring cup to allow for evaporation.
- Pause the Thermomix. Scrape down the sides and bottom of the bowl with the spatula to ensure even cooking and prevent any sticking.
- Continue cooking for another 40 minutes / 95°C / Speed 2 / Reverse, or until the quinces are very soft and the mixture has thickened considerably. Keep the simmering basket on the lid.
- Once cooked, blend the mixture. Start at Speed 5 and gradually increase to Speed 8-10 for 30-60 seconds, or until a smooth, homogeneous purée is achieved.
- To settle and prevent sticking, cook for 2 minutes / 90°C / Speed 1 / Reverse.
- Carefully transfer the hot quince paste into small, clean, heatproof bowls or molds. Allow to cool completely.
- For traditional marmalade, cover each bowl with parchment paper and let it dry in a sunny, airy spot for 5 to 7 days, or until a firm, sliceable consistency is reached.
