Homemade Date Syrup

- 500 g pitted dates
- 750 g water
- Pinch of salt (optional)
Instructions
- Place the pitted dates and water into the Thermomix mixing bowl. If desired, add a pinch of salt.
- Cook for 20 minutes / 95°C / Speed 2 (Reverse). This softens the dates and infuses the water.
- Pause the machine. Scrape down the sides and bottom of the mixing bowl with the spatula to ensure all dates are submerged and cooking evenly.
- Continue cooking for another 15 minutes / 95°C / Speed 2 (Reverse).
- Increase speed and blend the mixture for 1 minute / Speed 8, gradually increasing from Speed 5 to 8. Scrape down the sides if necessary and blend again for 30 seconds / Speed 10 for a very smooth consistency.
- Place a fine-mesh sieve or nut milk bag over a large bowl. Carefully pour the date mixture into the sieve/bag and press firmly with a spoon or your hands to extract all the liquid. Discard the date pulp, or save for another use.
- Pour the strained date liquid back into the clean Thermomix mixing bowl. To thicken the syrup, cook for 10 minutes / 95°C / Speed 2 (Reverse). Remove the measuring cup and place the simmering basket on the lid to prevent splatter and allow steam to escape.
- Check the consistency. If you prefer a thicker syrup, continue cooking for another 5-10 minutes / 95°C / Speed 2 (Reverse), checking every few minutes. Remember it will thicken further as it cools.
- For the last 1 minute / 90°C / Speed 1 (Reverse), allow the syrup to settle and prevent any sticking to the bottom of the bowl.
- Carefully transfer the hot date syrup to a clean, sterilised jar. Let it cool completely before sealing and storing in the refrigerator.
