High-Protein Vegetarian Egg Fried Rice

Ingredients
- 10 g cooking oil
- 3 eggs, whisked
- 70 g brown onion, halved
- 2 garlic cloves
- 20 g cooking oil
- 120 g firm tofu (or fresh paneer), cubed
- 150 g frozen mixed vegetables (or fresh vegetable mix, chopped)
- 300 g cooked day-old white rice, cold
- 15 g Mirin (or Chinese cooking wine)
- 15 g Vegetarian Oyster Sauce (or dark soy sauce)
- 15 g light soy sauce
- 5 g sesame oil
- 1 pinch ground black pepper
- 40 g spring onions, sliced
Instructions
- Add 10 g cooking oil to the mixing bowl. Heat 1 min / 120°C / Speed 1.
- Add 3 whisked eggs. Cook 2 min / 120°C / Reverse / Speed 1. Transfer the scrambled egg to a separate bowl, roughly chop with a spatula, and set aside. Rinse and dry the mixing bowl.
- Place 70 g brown onion, halved, and 2 garlic cloves into the mixing bowl. Chop 3 sec / Speed 5. Scrape down the sides of the mixing bowl with a spatula.
- Add 20 g cooking oil and 120 g firm tofu, cubed. Sauté 3 min / 120°C / Reverse / Speed 1.
- Add 150 g frozen mixed vegetables. Cook 2 min / 120°C / Reverse / Speed 1.
- Insert the butterfly whisk. Add 300 g cold cooked day-old white rice, 15 g Mirin, 15 g Vegetarian Oyster Sauce, 15 g light soy sauce, 5 g sesame oil, and 1 pinch ground black pepper. Heat 4 min / 100°C / Reverse / Speed 1.5.
- Remove the butterfly whisk. Add the reserved scrambled egg and 40 g sliced spring onions to the mixing bowl. Gently mix with a spatula to combine. Then, mix 1 min / 90°C / Reverse / Speed 1 to ensure even distribution and prevent sticking.
- Serve immediately.
