Hearty Wild Boar Stew with Creamy Mashed Potatoes

Ingredients
- 600 g wild boar shoulder or leg, cut into 3-4 cm cubes
- 20 g plain flour
- 1 tsp salt, plus more to taste
- 0.5 tsp black pepper, plus more to taste
- 30 g olive oil, divided
- 150 g onion, quartered
- 100 g carrots, peeled and roughly chopped
- 50 g celery, roughly chopped
- 10 g garlic, peeled (2-3 cloves)
- 200 g dry red wine
- 30 g tomato paste
- 2 bay leaves
- 2 sprigs fresh thyme
- 1 sprig fresh rosemary
- 500 g beef or game stock
- 800 g floury potatoes, peeled and quartered
- 100 g milk, warm
- 50 g butter
Instructions
- Pat the wild boar cubes dry with paper towels. Season generously with 1 tsp salt and 0.5 tsp pepper, then toss with 20 g plain flour until lightly coated. Set aside.
- Add 150 g onion, 100 g carrots, 50 g celery, and 10 g garlic to the Thermomix bowl. Chop 5 sec / Speed 5. Scrape down the sides of the bowl.
- Add 20 g olive oil to the bowl. Sauté 8 min / 120°C / Speed 1. Remove the measuring cup and place the simmering basket on the lid to allow for evaporation.
- While the vegetables are sautéing, heat the remaining 10 g olive oil in a large frying pan over medium-high heat. Brown the floured wild boar cubes in batches until golden on all sides. Transfer the browned boar to a plate and set aside. (Browning in a pan develops deeper flavour than in the Thermomix bowl).
- Add 200 g dry red wine to the Thermomix bowl. Scrape down the bottom of the pan to deglaze, then cook 3 min / Varoma / Speed 1 to reduce the alcohol.
- Add the browned wild boar, 30 g tomato paste, 2 bay leaves, 2 sprigs fresh thyme, 1 sprig fresh rosemary, and 500 g beef or game stock to the bowl. Season with salt and pepper to taste.
- Cook 45 min / 98°C / Speed 1 / Reverse. Remove the measuring cup and place the simmering basket on the lid to prevent splatter and allow for evaporation.
- Pause the Thermomix. Scrape down the sides and bottom of the bowl with the spatula. Check the consistency and adjust liquid if needed (add a splash more stock if too thick, or continue cooking without the simmering basket for more evaporation if too thin).
- Continue cooking 30 min / 98°C / Speed 1 / Reverse. Ensure the simmering basket is still on the lid instead of the measuring cup.
- Once the stew is cooked, remove the bay leaves, thyme, and rosemary sprigs. Set the stew aside in a serving dish, keeping it warm while you prepare the mashed potatoes. Clean the Thermomix bowl.
- Add 1000 g water to the clean Thermomix bowl. Place 800 g quartered potatoes into the simmering basket. Insert the simmering basket into the bowl.
- Cook 20 min / Varoma / Speed 2, or until the potatoes are very tender. Carefully remove the simmering basket with the spatula and discard the cooking water from the bowl.
- Add the cooked potatoes back into the clean Thermomix bowl. Add 100 g warm milk, 50 g butter, and season with salt and pepper to taste. Insert the butterfly whisk.
- Mash 30 sec / Speed 3. Scrape down the sides and mash again for 10-20 sec / Speed 3 if needed, until smooth and creamy. Do not exceed Speed 4 with the butterfly whisk.
- Serve the hearty wild boar stew immediately with the creamy mashed potatoes.
