Hearty Wholemeal Seeded Loaf

Ingredients
- 320 g warm water (approx. 37°C)
- 7 g active dry yeast (2 tsp)
- 1 tsp sugar (optional, for yeast activation)
- 500 g wholemeal flour
- 10 g salt (1.5 tsp)
- 20 g olive oil, plus extra for greasing
- 30 g mixed seeds (e.g., sunflower, flax, pumpkin)
Instructions
- Add warm water, yeast, and sugar (if using) to the Thermomix bowl. Mix 2 min / 37°C / Speed 2. This activates the yeast.
- Add wholemeal flour, salt, olive oil, and mixed seeds to the bowl. Mix 10 sec / Speed 6 to combine.
- Select the Dough function and knead for 3 min. The dough should be soft and elastic.
- Lightly grease a large bowl with olive oil. Remove the dough from the Thermomix bowl and shape it into a ball. Place it in the greased bowl, cover with a damp cloth or plastic wrap, and let it proof in a warm place for 60-90 minutes, or until doubled in size.
- While the dough is proofing, preheat your conventional oven to 200°C (180°C fan/Gas Mark 6). Lightly grease a 900g (2 lb) loaf tin.
- Once proofed, gently punch down the dough and turn it out onto a lightly floured surface. Shape it into a loaf and place it into the prepared loaf tin.
- Cover the loaf tin with a damp cloth or plastic wrap and let it proof again in a warm place for another 20-30 minutes, or until visibly risen.
- Bake the bread in the preheated oven for 30-35 minutes, or until golden brown and hollow-sounding when tapped on the bottom.
- Remove the bread from the oven and immediately transfer it to a wire rack to cool completely before slicing and serving.
