Hearty White Bean Stew (Loubia)

Ingredients
- 1 large onion, peeled and quartered
- 2 cloves garlic, peeled
- 30 g olive oil
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp sweet paprika
- 0.5 tsp ground turmeric
- 0.25 tsp cayenne pepper (optional, for heat)
- 2 tbsp tomato paste
- 2 cans (400g each) cannellini beans, drained and rinsed
- 1 can (400g) chopped tomatoes
- 500 g vegetable stock
- 1 tsp salt, or to taste
- 0.5 tsp black pepper, or to taste
- Fresh coriander or parsley, chopped, for garnish
Instructions
- Add onion and garlic to the mixing bowl. Chop 3 sec / Speed 5. Scrape down the sides of the bowl with the spatula.
- Add olive oil to the bowl. Sauté 5 min / 120°C / Speed 1 (Reverse).
- Add ground cumin, ground coriander, sweet paprika, ground turmeric, cayenne pepper (if using), and tomato paste to the bowl. Cook 2 min / 100°C / Speed 1 (Reverse).
- Add the drained and rinsed cannellini beans, chopped tomatoes, vegetable stock, salt, and black pepper to the bowl. Stir gently with the spatula.
- Cook 20 min / 100°C / Speed 1 (Reverse). Place the simmering basket on the lid instead of the measuring cup to allow steam to escape and prevent splattering.
- Pause the machine. Scrape down the sides and bottom of the bowl with the spatula to ensure even cooking and prevent sticking. Check the consistency and add a splash more vegetable stock if you prefer a thinner stew.
- Continue to cook 10 min / 100°C / Speed 1 (Reverse), with the simmering basket on the lid.
- To settle the stew and prevent sticking, cook 2 min / 90°C / Speed 1 (Reverse).
- Transfer the hearty white bean stew to serving bowls. Garnish generously with fresh chopped coriander or parsley before serving.
