Hearty Vegetable and Potato Gratin

  1. Preheat oven to 200°C (180°C fan/Gas Mark 6). Lightly grease a medium ovenproof dish (approx. 20x25 cm).
  2. Place cheese in the clean, dry mixing bowl. Grate 10 sec / Speed 8. Transfer to a bowl and set aside.
  3. Without cleaning the bowl, add 500 g water. Insert the simmering basket. Place sliced potatoes and carrots into the Varoma dish. Place broccoli florets in the Varoma tray. Secure the Varoma lid.
  4. Place Varoma onto the mixing bowl lid. Steam 20 min / Varoma / Speed 2. Carefully remove Varoma and set aside. Discard water from the mixing bowl.
  5. Add onion and garlic to the mixing bowl. Chop 5 sec / Speed 5. Scrape down the sides of the mixing bowl with the spatula.
  6. Add olive oil. Sauté 3 min / 120°C / Speed 1.
  7. Add flour to the mixing bowl. Cook 2 min / 100°C / Speed 1.
  8. Add milk, vegetable stock, salt, pepper, and nutmeg to the mixing bowl. Cook 8 min / 90°C / Speed 3. Pause halfway through (after 4 minutes) to scrape down the sides and bottom of the bowl with the spatula to ensure even cooking and prevent sticking. Resume cooking.
  9. Add half of the grated cheese (approx. 75 g) to the mixing bowl. Mix 30 sec / Speed 2 (Reverse) to combine.
  10. Arrange half of the steamed potatoes, carrots, and broccoli in the prepared oven dish. Pour half of the sauce over the vegetables. Repeat with the remaining vegetables and sauce.
  11. Sprinkle the remaining grated cheese over the top of the gratin.
  12. Bake for 20-25 minutes, or until golden brown and bubbling. Let rest for 5 minutes before serving.
