Hearty Turkish Red Lentil Soup

Ingredients
- 150 g onion, peeled and quartered
- 2 cloves garlic, peeled
- 20 g olive oil
- 100 g carrot, peeled and roughly chopped
- 1 tbsp tomato paste
- 200 g red lentils, rinsed thoroughly
- 1000 g vegetable stock
- 1 tsp dried mint
- 1 tsp sweet paprika
- ½ tsp ground cumin
- ½ tsp salt, or to taste
- ¼ tsp black pepper, or to taste
- Lemon wedges, for serving
Instructions
- Add onion and garlic to the mixing bowl. Chop 5 sec / Speed 5. Scrape down sides of the bowl.
- Add olive oil. Sauté 5 min / 120°C / Speed 1.
- Add chopped carrot and tomato paste to the bowl. Sauté 3 min / 100°C / Speed 1.
- Add the rinsed red lentils and vegetable stock to the bowl. Place the simmering basket on top of the lid instead of the measuring cup to prevent splatter during cooking.
- Cook 25 min / 100°C / Speed 1. After cooking, check that the lentils are tender. If not, cook for an additional 5 minutes at the same settings.
- Add dried mint, sweet paprika, ground cumin, salt, and black pepper to the cooked soup.
- Blend 1 min / Speed 5-9, gradually increasing the speed, until your desired smoothness is reached.
- Cook 2 min / 90°C / Speed 2 (Reverse) to ensure all spices are well incorporated and to prevent any sticking to the bottom of the bowl.
- Serve the hearty Turkish Red Lentil Soup hot, garnished with fresh lemon wedges.
