  1. Cut the pork belly into 2 cm cubes and set aside.
  2. Add onion (100 g) and garlic (2 cloves) to the mixing bowl. Chop 5 sec / Speed 5. Scrape down the sides of the bowl with the spatula.
  3. Add olive oil (20 g) and the cubed pork belly (300 g) to the mixing bowl. Sauté 10 min / 120°C / Speed 1 / Reverse. This step helps to brown the pork and render some fat.
  4. Add tinned tomato puree (200 g), water (400 g), salt (1 tsp), and black pepper (0.5 tsp). Cook 5 min / 95°C / Speed 1 / Reverse. Place the simmering basket on the lid instead of the measuring cup to prevent splatter and allow for some evaporation.
  5. Add the potatoes (300 g, cut into 2 cm cubes) and zucchini (150 g, chopped) to the mixing bowl. Cook 15 min / 95°C / Speed 2 / Reverse.
  6. Pause the Thermomix and scrape down the sides and bottom of the mixing bowl with the spatula. Check the consistency and add an additional 50-100 g of water if the stew appears too thick.
  7. Add buckwheat (80 g) to the mixing bowl. Continue cooking 15 min / 95°C / Speed 2 / Reverse. Keep the simmering basket on the lid for continued evaporation.
  8. Check if the potatoes and buckwheat are tender. If not, cook for another 5-10 minutes at 95°C / Speed 2 / Reverse until desired tenderness is reached.
  9. Stir in the cream (50 g, optional) and cook 2 min / 90°C / Speed 1 / Reverse to settle the stew and prevent sticking.
  10. Serve the Hearty Pork Belly and Buckwheat Stew hot, garnished with fresh chopped parsley if desired.
