Hearty Macaroni Bolognese

Ingredients
- 150 g onion, quartered
- 100 g carrot, roughly chopped
- 50 g celery stalk, roughly chopped
- 30 g olive oil
- 500 g minced beef
- 20 g tomato paste
- 400 g crushed tomatoes (passata)
- 150 g beef stock
- 1 tsp dried oregano
- 1 bay leaf
- 1/2 tsp salt, plus more for pasta water
- 1/4 tsp black pepper
- 300 g macaroni pasta
- 1200 g water (for pasta)
- Parmesan cheese, grated, for serving
Instructions
- Place onion, carrot, and celery into the mixing bowl. Chop 5 sec / Speed 5. Scrape down the sides of the bowl.
- Add olive oil. Sauté 7 min / 120°C / Speed 1. For chunkier vegetables, use Reverse mode.
- Add minced beef. Cook 8 min / 120°C / Speed 1 / Reverse. Break up the meat with the spatula during the first minute if needed.
- Add tomato paste, crushed tomatoes, beef stock, dried oregano, bay leaf, 1/2 tsp salt, and 1/4 tsp pepper. Place the simmering basket on the mixing bowl lid instead of the measuring cup to allow steam to escape.
- Cook 25 min / 95°C / Speed 2 / Reverse. During cooking, pause after 15 minutes to scrape down the sides and bottom of the bowl with the spatula, checking the thickness and adjusting liquid if needed.
- Remove the Bolognese sauce from the mixing bowl and set aside in a serving dish. Discard the bay leaf.
- Rinse the mixing bowl quickly. Add 1200 g water and 1 tsp salt to the mixing bowl. Bring to a boil 10 min / 100°C / Speed 1.
- Add the macaroni pasta through the lid opening. Cook according to package instructions (typically 8-12 minutes) / 100°C / Speed 1 / Reverse. Ensure pasta is fully submerged.
- Once cooked, drain the macaroni using the simmering basket or a colander.
- Combine the cooked macaroni with the Bolognese sauce. Stir gently to combine. Serve immediately, topped with grated Parmesan cheese.
