Hearty Low-Carb Beef Chili

Ingredients
- 1 large onion (approx. 150 g), quartered
- 2 cloves garlic
- 20 g olive oil
- 500 g ground beef (mince)
- 1 red bell pepper (approx. 150 g), deseeded and quartered
- 1 green bell pepper (approx. 150 g), deseeded and quartered
- 400 g canned diced tomatoes (no added sugar)
- 200 g beef broth (low sodium)
- 2 tbsp chili powder
- 1 tbsp ground cumin
- 1 tsp smoked paprika
- ½ tsp dried oregano
- ¼ tsp cayenne pepper (optional, for extra heat)
- ½ tsp salt
- ¼ tsp black pepper
- Fresh cilantro, chopped (for garnish)
- Avocado, diced (for garnish)
- Sour cream or Greek yogurt (optional, for serving, if not strictly dairy-free)
Instructions
- Place onion and garlic into the mixing bowl. Chop 5 sec / Speed 5. Scrape down the sides of the bowl.
- Add olive oil to the mixing bowl. Sauté 5 min / 120°C / Speed 1.
- Add ground beef to the mixing bowl. Cook 8 min / 120°C / Reverse / Speed 1, breaking up the meat with the spatula halfway through, until browned. Drain any excess fat if desired, then return the meat to the bowl.
- Add red and green bell peppers to the mixing bowl. Chop 3 sec / Reverse / Speed 4. Scrape down the sides of the bowl.
- Add diced tomatoes, beef broth, chili powder, ground cumin, smoked paprika, dried oregano, cayenne pepper (if using), salt, and black pepper to the mixing bowl. Stir 10 sec / Reverse / Speed 2.
- Secure the simmering basket on top of the mixing bowl lid instead of the measuring cup to allow steam to escape and prevent splattering. Cook 20 min / 98°C / Reverse / Speed 2.
- Pause, scrape down the sides and bottom of the mixing bowl with the spatula to ensure even cooking and prevent sticking. Check thickness and adjust liquid if needed (add a splash of broth if too thick).
- Continue to cook 10 min / 98°C / Reverse / Speed 2, with the simmering basket on the lid.
- To settle the chili and prevent sticking, cook for a final 2 min / 90°C / Reverse / Speed 1.
- Serve hot, garnished with fresh cilantro and diced avocado. Optionally, add a dollop of sour cream or Greek yogurt if not adhering to strict dairy-free guidelines.
