Hearty Lentil and Vegetable Stew

Ingredients
- 80 g onion, peeled
- 2 cloves garlic, peeled
- 15 g olive oil
- 100 g carrot, peeled and roughly chopped
- 50 g celery stalk, roughly chopped
- 100 g brown or green lentils, rinsed
- 400 g vegetable broth
- 200 g canned diced tomatoes
- 1 tsp ground cumin
- ½ tsp smoked paprika
- ½ tsp dried thyme
- Salt, to taste
- Black pepper, to taste
- 50 g fresh spinach
Instructions
- Add onion and garlic to the mixing bowl. Chop 3 sec / Speed 5. Scrape down the sides of the bowl with the spatula.
- Add olive oil to the mixing bowl. Sauté 3 min / 120°C / Speed 1.
- Add carrot and celery to the mixing bowl. Chop 3 sec / Speed 5 (Reverse mode for chunkier pieces). Scrape down the sides of the bowl.
- Add the rinsed lentils, vegetable broth, diced tomatoes, ground cumin, smoked paprika, and dried thyme to the mixing bowl. Season with salt and black pepper.
- Cook 25 min / 100°C / Reverse / Speed 1. Place the simmering basket on the lid instead of the measuring cup to prevent splatter and allow for some evaporation.
- After 15 minutes of cooking, pause the Thermomix. Scrape down the sides and bottom of the mixing bowl with the spatula. Check the consistency and add a splash more broth if the stew appears too thick. Continue cooking.
- Add fresh spinach to the mixing bowl. Cook 2 min / 90°C / Reverse / Speed 1, or until the spinach is wilted.
- Stir 1 min / 90°C / Reverse / Speed 1-2 to ensure even distribution and prevent any sticking to the bottom of the bowl. Serve hot.
