Hearty Kangaroo and Oyster Stew

Ingredients
- 20 g olive oil
- 100 g onion, quartered
- 2 cloves garlic
- 500 g kangaroo mince
- 300 g potatoes, peeled and diced (approx. 1.5-2 cm)
- 400 g canned diced tomatoes
- 400 g vegetable stock
- 5 g sugar (1 tsp)
- 1/2 tsp salt, or to taste
- 1/4 tsp black pepper, or to taste
- 400 g canned baked beans, undrained
- 12-16 fresh oysters, shucked
- 1 lemon, zest and juice
- 1/2 cucumber, diced (for garnish)
- 1 bunch watercress, roughly chopped (for garnish)
- 50 g breadcrumbs (for garnish)
Instructions
- Add olive oil, onion, and garlic to the Thermomix bowl. Chop 3 sec / Speed 5. Scrape down the sides of the bowl.
- Sauté 5 min / 120°C / Speed 1.
- Add kangaroo mince to the bowl. Cook 8 min / 120°C / Reverse / Speed 1, using the spatula to break up the mince if necessary.
- Add diced potatoes, canned diced tomatoes, vegetable stock, sugar, salt, and pepper to the bowl. Stir gently with the spatula.
- Cook 20 min / 98°C / Reverse / Speed 1. Place the simmering basket on the lid instead of the measuring cup to allow for evaporation and prevent splatter.
- Pause, scrape down the sides and bottom of the bowl. Check the consistency and potato tenderness. If the stew appears too thick, add a splash more stock or water. Continue cooking if needed until potatoes are tender.
- Add the undrained canned baked beans to the bowl. Cook 5 min / 90°C / Reverse / Speed 1.
- Gently add the shucked oysters to the stew. Cook 2 min / 90°C / Reverse / Speed 1 to just warm them through.
- Add the lemon zest and juice. Taste and adjust seasoning as needed.
- Ladle the hearty stew into individual serving bowls. Garnish generously with fresh diced cucumber, chopped watercress, and a sprinkle of breadcrumbs before serving.
