Hearty Filipino Lomi Noodle Soup

Ingredients
- 2 cloves garlic
- 50 g onion, halved
- 15 g cooking oil
- 150 g pork belly or shoulder, thinly sliced
- 50 g chicken liver, sliced (optional)
- 50 g small shrimp, peeled and deveined
- 500 g chicken or pork stock
- 1 tbsp soy sauce
- 1 tsp fish sauce (patis)
- Pinch of black pepper
- 200 g fresh thick egg noodles (lomi noodles)
- 50 g carrots, julienned
- 50 g cabbage, shredded
- 2 tbsp cornstarch
- 3 tbsp cold water
- 1 large egg, beaten
- 1 tsp sesame oil (optional, for serving)
- Spring onions, chopped, for garnish
- Calamansi or lemon wedges, for serving
Instructions
- Add 2 cloves garlic and 50 g onion to the clean, dry Thermomix bowl. Chop 3 sec / Speed 5. Scrape down the sides of the bowl.
- Add 15 g cooking oil and 150 g thinly sliced pork to the bowl. Sauté 5 min / 120°C / Speed 1 (Reverse).
- Add 500 g chicken or pork stock, 1 tbsp soy sauce, 1 tsp fish sauce, and a pinch of black pepper to the bowl. Place the simmering basket on the lid instead of the measuring cup to allow steam to escape. Cook 8 min / 100°C / Speed 1 (Reverse).
- Add 200 g fresh thick egg noodles and 50 g julienned carrots to the bowl. Cook 5 min / 95°C / Speed 2 (Reverse). Pause, scrape down the sides and bottom of the bowl with the spatula to ensure even cooking and prevent sticking. Check thickness and adjust liquid if needed (add a splash of hot water if too thick).
- Add 50 g shredded cabbage, 50 g peeled and deveined shrimp, and 50 g sliced chicken liver (if using) to the bowl. Cook 3 min / 95°C / Speed 2 (Reverse).
- In a small bowl, dissolve 2 tbsp cornstarch in 3 tbsp cold water to create a slurry. Add the cornstarch slurry through the lid opening. Cook 2 min / 90°C / Speed 2 (Reverse) until the soup begins to thicken.
- Slowly pour the 1 large beaten egg through the lid opening while the blades are running. Cook 1 min / 90°C / Speed 1 (Reverse).
- Cook for a final 1 min / 90°C / Speed 1 (Reverse) to ensure even distribution and prevent sticking.
- Carefully transfer the Lomi to serving bowls. Drizzle with 1 tsp sesame oil (optional) and garnish with chopped spring onions. Serve immediately with calamansi or lemon wedges on the side.
