Hearty Dutch Split Pea Soup (Erwtensoep)

  1. Rinse the dried green split peas thoroughly under cold running water. Set aside to drain.
  2. Add onion, leek, carrot, and celery root (or celery stalks) to the mixing bowl. Chop 5 sec / Speed 5. Scrape down the sides of the bowl.
  3. Add olive oil to the bowl. Sauté 7 min / 120°C / Speed 1 (Reverse).
  4. Add the rinsed split peas, vegetable stock, and bay leaf to the mixing bowl. Place the simmering basket on top of the lid instead of the measuring cup to allow steam to escape and prevent splatter.
  5. Cook 45 min / 98°C / Speed 2 (Reverse).
  6. Pause the machine. Carefully remove the simmering basket. Scrape down the sides and bottom of the mixing bowl with the spatula to ensure even cooking and prevent sticking. Check the consistency; if too thick, add up to 100 g more stock.
  7. Add the smoked sausage to the mixing bowl. Place the simmering basket back on the lid. Cook for another 20 min / 98°C / Speed 2 (Reverse).
  8. Carefully remove the smoked sausage from the bowl and set aside. Remove the bay leaf and discard.
  9. For a smoother soup, blend the soup gradually 30 sec / Speed 5-8, increasing speed gradually. For a chunkier soup, skip this step.
  10. Slice the smoked sausage into thick rounds and return it to the mixing bowl. Add salt and pepper to taste.
  11. Stir gently 2 min / 90°C / Speed 1 (Reverse) to combine and ensure even heat distribution.
  12. Serve hot, garnished with fresh chopped parsley.
