Hearty Chilli Con Carne

Ingredients
- 150 g onion, quartered
- 2 cloves garlic
- 20 g olive oil
- 500 g beef mince (ground beef)
- 1-2 fresh red chillies, deseeded and roughly chopped (or 1-2 tsp chilli powder)
- 1 tsp ground cumin
- 1 tsp smoked paprika
- ½ tsp dried oregano
- 400 g canned chopped tomatoes
- 30 g tomato paste
- 200 g beef stock (or water + ½ stock cube)
- 1 bay leaf (optional)
- 400 g canned kidney beans, drained and rinsed
- Salt and freshly ground black pepper to taste
- Fresh coriander, sour cream, or rice for serving (optional)
Instructions
- Place onion and garlic in the Thermomix bowl. Chop 5 sec / Speed 5. Scrape down sides of the bowl with the spatula.
- Add olive oil. Sauté 5 min / 120°C / Speed 1.
- Add beef mince, fresh chillies (or chilli powder), cumin, smoked paprika, oregano, and a pinch of salt and pepper. Cook 10 min / 100°C / Reverse / Speed 1, breaking up the mince with the spatula through the lid opening after 5 minutes.
- Add chopped tomatoes, tomato paste, beef stock, and bay leaf (if using). Place the simmering basket on the lid instead of the measuring cup to prevent splatter and allow for evaporation. Cook 30 min / 98°C / Reverse / Speed 1.
- After 15 minutes of cooking, pause, scrape down the sides and bottom of the bowl with the spatula, and check the consistency. If too thick, add a splash more stock or water. Continue cooking.
- Add drained and rinsed kidney beans. Cook a further 10 min / 98°C / Reverse / Speed 1.
- Remove bay leaf. Taste and adjust seasoning if necessary.
- To finish, cook 2 min / 90°C / Reverse / Speed 1 to ensure even distribution and prevent sticking.
- Serve hot, garnished with fresh coriander and a dollop of sour cream, if desired. Excellent with rice or tortilla chips.
