Hearty Chili con Carne

Ingredients
- 150 g onion, quartered
- 2 cloves garlic
- 1 fresh red chili (deseeded for less heat), or 1 tsp chili powder
- 20 g olive oil
- 500 g beef mince
- 2 tbsp tomato paste
- 1 tsp ground cumin
- 1 tsp smoked paprika
- ½ tsp dried oregano
- ¼ tsp cayenne pepper (optional, for extra heat)
- 400 g canned chopped tomatoes
- 200 g beef stock
- 400 g canned kidney beans, drained and rinsed
- 100 g canned chopped green chilies (optional)
- ½ tsp salt, or to taste
- ¼ tsp black pepper, or to taste
- 1 tsp sugar (optional, to balance acidity)
- Fresh coriander, chopped (for garnish)
- Sour cream (for serving)
- Grated cheese (for serving)
- Cooked rice or crusty bread (for serving)
Instructions
- Place onion, garlic, and fresh red chili (if using) into the mixing bowl. Chop 5 sec / Speed 5. Scrape down sides of bowl.
- Add olive oil to the mixing bowl. Sauté 5 min / 120°C / Speed 1 (Reverse).
- Add beef mince to the mixing bowl. Break up with the spatula. Cook 8 min / 120°C / Speed 1 (Reverse), or until browned. If there is excessive fat, carefully drain it off.
- Add tomato paste, ground cumin, smoked paprika, dried oregano, and cayenne pepper (if using) to the mixing bowl. Cook 2 min / 100°C / Speed 1 (Reverse) to toast the spices and deepen the flavour.
- Add canned chopped tomatoes, beef stock, drained and rinsed kidney beans, canned chopped green chilies (if using), and sugar (if using) to the mixing bowl. Place the simmering basket on top of the mixing bowl lid instead of the measuring cup to allow steam to escape and prevent splattering.
- Cook 40 min / 95°C / Speed 1 (Reverse). After 20 minutes, pause the machine, carefully scrape down the sides and bottom of the mixing bowl with the spatula, and check the consistency. Adjust liquid if needed, then resume cooking.
- Add salt and black pepper to taste. Cook 2 min / 90°C / Speed 1 (Reverse) to allow the flavours to meld and prevent sticking.
- Serve hot, garnished with fresh coriander, a dollop of sour cream, and grated cheese. Enjoy with cooked rice or crusty bread.
