  1. Add 150 g onion, quartered, and 2-3 cloves garlic to the mixing bowl. Chop 5 sec / Speed 5. Scrape down the sides of the bowl.
  2. Add 20 g olive oil (if bacon is lean) and 150 g smoked bacon, diced, to the bowl. Sauté 8 min / 120°C / Speed 1.
  3. Add 200 g smoked sausage, sliced, to the bowl. Sauté 5 min / 120°C / Speed 1 / Reverse.
  4. Add 1 tbsp sweet paprika, 1 tsp hot paprika (optional), 1 tsp dried marjoram, 1 bay leaf, and 3 allspice berries to the bowl. Add 400 g canned chopped tomatoes and 400 g vegetable broth. Cook 5 min / 100°C / Speed 1 / Reverse.
  5. Add 2 cans (400g each, drained) white beans and 70 g tomato paste to the bowl. Season with ½ tsp salt and ¼ tsp black pepper. Cook 25 min / 95°C / Speed 2 / Reverse. Place the simmering basket on the lid instead of the measuring cup to allow steam to escape and prevent splatter.
  6. After 15 minutes of simmering (during step 5), pause the Thermomix. Scrape down the sides and bottom of the bowl with the spatula. Check the consistency; if too thick, add a splash more broth (50-100g). Continue cooking.
  7. Cook for a further 2 min / 90°C / Speed 1 / Reverse to ensure even distribution and prevent sticking.
  8. Remove the bay leaf and allspice berries before serving. Taste and adjust seasoning if needed. Serve hot, garnished with fresh marjoram or parsley, if desired.
