Hearty Black Bean and Tomato Pasta

Ingredients
- 1 onion, peeled and quartered
- 2 cloves garlic, peeled
- 20 g organic extra virgin coconut oil
- 400 g tinned chopped tomatoes
- 400 g tinned black beans, drained and rinsed
- 500 g vegetable stock or water
- 1 tsp red wine vinegar
- ½ tsp Marmite (optional, for umami)
- 1 tsp dried oregano
- ½ tsp salt, or to taste
- ¼ tsp black pepper, or to taste
- 250 g small pasta shapes (e.g., fusilli, penne, ditalini)
- Fresh parsley or basil, chopped (for garnish, optional)
Instructions
- Place onion and garlic in the mixing bowl. Chop 5 sec / Speed 5. Scrape down the sides of the bowl with the spatula.
- Add 20 g organic extra virgin coconut oil to the mixing bowl. Sauté 5 min / 120°C / Speed 1.
- Add 400 g tinned chopped tomatoes, 400 g drained and rinsed black beans, 500 g vegetable stock or water, 1 tsp red wine vinegar, ½ tsp Marmite (if using), 1 tsp dried oregano, ½ tsp salt, and ¼ tsp black pepper to the mixing bowl. Cook 10 min / 100°C / Speed 2 (Reverse).
- Add 250 g small pasta shapes to the mixing bowl. Cook according to package instructions for al dente, typically 8-12 min / 100°C / Speed 1 (Reverse). Ensure the pasta is submerged in the liquid.
- Pause the Thermomix, scrape down the sides and bottom of the bowl with the spatula. Check the pasta for doneness and consistency. If the sauce is too thick, add a splash more hot water. Continue cooking if needed for the remaining time.
- Once the pasta is cooked to your liking, finish by cooking 1 min / 90°C / Speed 1 (Reverse) to settle and prevent sticking.
- Serve immediately, garnished with fresh chopped parsley or basil if desired.
