  1. Place onion, garlic, celery, and capsicum into the mixing bowl. Chop 5 sec / Speed 5. Scrape down sides of bowl with spatula.
  2. Add olive oil to the mixing bowl. Sauté 5 min / 120°C / Speed 1 (Reverse).
  3. Add salt, dried oregano, paprika, ground cumin, and cayenne pepper to the mixing bowl. Cook 1 min / 120°C / Speed 1 (Reverse).
  4. Add minced beef to the mixing bowl. Break up any large clumps with the spatula. Cook 10 min / 120°C / Speed 1 (Reverse), using the spatula to stir occasionally through the lid opening to ensure even browning. The mixture should sound like a steady churn.
  5. Add diced/crushed tinned tomatoes, beef stock paste (or crumbled stock cubes), water, and tomato paste to the mixing bowl. Place the simmering basket on the mixing bowl lid instead of the measuring cup to allow for evaporation and prevent splatter. Cook 15 min / 95°C / Speed 2 (Reverse).
  6. Pause the machine. Scrape down the sides and bottom of the mixing bowl with the spatula. Check the thickness and adjust liquid if needed (add a splash of water if too thick).
  7. Add the drained and rinsed kidney beans to the mixing bowl. Cook 5 min / 95°C / Speed 2 (Reverse), with the simmering basket on the lid.
  8. Taste the chili and season with additional salt, pepper, or a pinch of sugar if the tomatoes are too acidic. Mix 10 sec / Speed 2 (Reverse).
  9. To settle and prevent sticking, cook for a final 2 min / 90°C / Speed 1 (Reverse). Serve hot with your preferred accompaniments.
