Hearty Beef and Garlic Stew

Ingredients
- 1 large onion, peeled and quartered
- 6-8 cloves garlic, peeled
- 30 g olive oil
- 800 g beef chuck or brisket, cut into 3-4 cm cubes
- 150 g dry white wine
- 500 g chicken stock
- 50 g tomato paste
- 200 g carrots, peeled and cut into 2 cm pieces
- 300 g potatoes, peeled and cut into 2 cm cubes
- 1 tsp salt, or to taste
- ½ tsp black pepper, or to taste
- 50 g Mersey Valley cheese, grated (for serving)
- 1 head lettuce, washed and dried (for side salad)
- 200 g cherry tomatoes, halved (for side salad)
- ½ lemon, juiced (for side salad dressing)
Instructions
- Add onion and garlic to the mixing bowl. Chop 5 sec / Speed 5. Scrape down sides of bowl.
- Add olive oil to the mixing bowl. Sauté 5 min / 120°C / Speed 1.
- Add beef cubes to the mixing bowl. Brown 8 min / 120°C / Reverse / Speed 1. Remove beef and set aside.
- Add white wine to the mixing bowl to deglaze. Cook 2 min / 100°C / Speed 1. Scrape down sides of bowl.
- Return beef to the mixing bowl. Add chicken stock, tomato paste, salt, and pepper. Stir 10 sec / Reverse / Speed 1.
- Add carrots and potatoes to the mixing bowl. Ensure all ingredients are submerged in liquid. Place simmering basket on top of the lid instead of the measuring cup to allow steam to escape.
- Cook 70 min / 95°C / Reverse / Speed 2. Pause halfway through (at 35 min) to scrape down the sides and bottom of the bowl with the spatula, check consistency, and add a splash more stock or water if too thick. Continue cooking.
- After cooking, check beef for tenderness. If needed, cook for an additional 10-20 min / 95°C / Reverse / Speed 2.
- For the last 2 minutes, cook 2 min / 90°C / Reverse / Speed 1 to settle and prevent sticking.
- While the stew is cooking, prepare a simple side salad by combining lettuce, cherry tomatoes, and a squeeze of lemon juice in a bowl.
- Serve the hearty beef and garlic stew hot, topped with grated Mersey Valley cheese and accompanied by the fresh side salad.
