Gruyere and Parmesan Cheese Crackers

  1. Preheat oven to 180°C (350°F). Line two baking trays with parchment paper.
  2. Place Gruyere and Parmesan cheese into the clean, dry Thermomix bowl. Grate 10 sec / Speed 9. Scrape down sides of bowl.
  3. Add flour, cold butter, salt, and pepper to the bowl. Mix 15 sec / Speed 5 until a crumbly mixture forms.
  4. If the mixture is too dry to form a dough, add 20-30 g ice-cold water and mix 10 sec / Speed 4 until a dough ball forms. Alternatively, use Knead mode for 30 seconds if preferred.
  5. Remove dough from the bowl, flatten slightly into a disc, wrap in cling film, and refrigerate for 15 minutes.
  6. On a lightly floured surface, roll out the dough to a thickness of about 2-3 mm. Use a cookie cutter or knife to cut into desired cracker shapes.
  7. Carefully transfer the crackers to the prepared baking trays.
  8. If desired, brush the crackers with beaten egg yolk and sprinkle with sesame or poppy seeds.
  9. Bake for 12-15 minutes, or until golden brown and crisp. Baking time may vary depending on cracker thickness and oven.
  10. Remove from the oven and let cool completely on a wire rack before serving. They will crisp up further as they cool.
