Gruyere and Parmesan Cheese Crackers

Ingredients
- 100 g Gruyere cheese, cut into 2-3 cm cubes
- 50 g Parmesan cheese, cut into 2-3 cm cubes
- 150 g plain flour
- 100 g cold unsalted butter, cut into cubes
- 1/2 tsp salt
- 1/4 tsp black pepper
- 20-30 g ice-cold water (optional, if needed)
- 1 egg yolk, beaten (for egg wash, optional)
- 1 tbsp sesame seeds or poppy seeds (optional, for topping)
Instructions
- Preheat oven to 180°C (350°F). Line two baking trays with parchment paper.
- Place Gruyere and Parmesan cheese into the clean, dry Thermomix bowl. Grate 10 sec / Speed 9. Scrape down sides of bowl.
- Add flour, cold butter, salt, and pepper to the bowl. Mix 15 sec / Speed 5 until a crumbly mixture forms.
- If the mixture is too dry to form a dough, add 20-30 g ice-cold water and mix 10 sec / Speed 4 until a dough ball forms. Alternatively, use Knead mode for 30 seconds if preferred.
- Remove dough from the bowl, flatten slightly into a disc, wrap in cling film, and refrigerate for 15 minutes.
- On a lightly floured surface, roll out the dough to a thickness of about 2-3 mm. Use a cookie cutter or knife to cut into desired cracker shapes.
- Carefully transfer the crackers to the prepared baking trays.
- If desired, brush the crackers with beaten egg yolk and sprinkle with sesame or poppy seeds.
- Bake for 12-15 minutes, or until golden brown and crisp. Baking time may vary depending on cracker thickness and oven.
- Remove from the oven and let cool completely on a wire rack before serving. They will crisp up further as they cool.
