Greek Braised Peas (Arakas Kokkinistos)

Ingredients
- 1 onion, roughly chopped (approx. 150 g)
- 2 spring onions, roughly chopped (approx. 50 g)
- 50 g olive oil, plus extra for serving
- 2 carrots, peeled and cut into 2-3 cm cubes (approx. 150 g)
- 2 potatoes, peeled and cut into 2-3 cm cubes (approx. 300 g)
- 100 g dry white wine
- 400 g canned chopped tomatoes (concassé)
- 1 vegetable stock cube (or 1 tsp vegetable stock paste)
- 600 g water
- 450 g peas (fresh or frozen)
- 2 tbsp fresh dill, chopped
- 2 tbsp fresh mint, chopped, plus extra for garnish
- Zest of 1 lemon
- 1 tbsp lemon juice
- Salt, to taste
- Black pepper, to taste
- 1 lemon, sliced, for garnish
Instructions
- Add onion and spring onions to the mixing bowl. Chop 5 sec / Speed 5. Scrape down the sides of the bowl.
- Add 50 g olive oil to the mixing bowl. Sauté 5 min / 120°C / Speed 1.
- Add chopped carrots and potatoes to the mixing bowl. Sauté 5 min / 120°C / Speed 1 (Reverse).
- Add 100 g white wine. Cook 2 min / 100°C / Speed 1 (without measuring cup, place simmering basket on lid to prevent splatter).
- Add 400 g chopped tomatoes, 1 vegetable stock cube, and 600 g water to the mixing bowl. Cook 15 min / 95°C / Speed 2 (Reverse), with simmering basket on lid.
- Pause the machine. Scrape down the sides and bottom of the mixing bowl. Check the tenderness of the potatoes and carrots. If the mixture appears too thick, add 50-100 g more water.
- Add 450 g peas, 1 tbsp chopped fresh dill, and 1 tbsp chopped fresh mint to the mixing bowl. Cook 7 min / 95°C / Speed 2 (Reverse), with simmering basket on lid.
- Add the remaining 1 tbsp chopped fresh dill, remaining 1 tbsp chopped fresh mint, lemon zest, 1 tbsp lemon juice, salt, and pepper to taste. Mix 1 min / 90°C / Speed 1 (Reverse).
- Serve immediately, garnished with fresh mint leaves, lemon slices, and a drizzle of extra olive oil.
