  1. Add onion and spring onions to the mixing bowl. Chop 5 sec / Speed 5. Scrape down the sides of the bowl.
  2. Add 50 g olive oil to the mixing bowl. Sauté 5 min / 120°C / Speed 1.
  3. Add chopped carrots and potatoes to the mixing bowl. Sauté 5 min / 120°C / Speed 1 (Reverse).
  4. Add 100 g white wine. Cook 2 min / 100°C / Speed 1 (without measuring cup, place simmering basket on lid to prevent splatter).
  5. Add 400 g chopped tomatoes, 1 vegetable stock cube, and 600 g water to the mixing bowl. Cook 15 min / 95°C / Speed 2 (Reverse), with simmering basket on lid.
  6. Pause the machine. Scrape down the sides and bottom of the mixing bowl. Check the tenderness of the potatoes and carrots. If the mixture appears too thick, add 50-100 g more water.
  7. Add 450 g peas, 1 tbsp chopped fresh dill, and 1 tbsp chopped fresh mint to the mixing bowl. Cook 7 min / 95°C / Speed 2 (Reverse), with simmering basket on lid.
  8. Add the remaining 1 tbsp chopped fresh dill, remaining 1 tbsp chopped fresh mint, lemon zest, 1 tbsp lemon juice, salt, and pepper to taste. Mix 1 min / 90°C / Speed 1 (Reverse).
  9. Serve immediately, garnished with fresh mint leaves, lemon slices, and a drizzle of extra olive oil.
