Grapefruit Lamb Skewers with Zesty Deviled Ham Steaks

Ingredients
- 500 g lamb leg, trimmed and cut into 2-3 cm cubes
- 1 large grapefruit, zest and juice (approx. 100 ml juice)
- 1/2 red onion (approx. 70 g), peeled and quartered
- 20 g olive oil, plus extra for cooking
- 1 tbsp curry powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 4 ham steaks (approx. 150-200 g each)
- 4 large eggs
- 100 g gherkin pickles, drained
- 1/2 white onion (approx. 70 g), peeled and quartered
- 1 orange, zest and juice (approx. 50 ml juice)
- 1/4 tsp ground cinnamon
- 2 tbsp mayonnaise
- 1 tbsp Dijon mustard
- 400 g can baked beans
Instructions
- Place 1/2 red onion into the mixing bowl. Chop 3 sec / Speed 5. Scrape down the sides of the bowl.
- Add grapefruit zest, grapefruit juice, 20 g olive oil, curry powder, salt, and pepper to the mixing bowl. Mix 10 sec / Speed 3.
- Transfer the marinade to a large bowl. Add the lamb cubes and toss to coat. Cover and refrigerate for at least 30 minutes, or up to 4 hours, to marinate.
- While the lamb marinates, place 500 g water into the mixing bowl. Insert the simmering basket and carefully place the 4 eggs into it. Cook 13 min / Varoma / Speed 1. Once cooked, remove the simmering basket with the spatula and cool the eggs under cold running water. Peel and set aside.
- Empty and dry the mixing bowl. Place 1/2 white onion and gherkin pickles into the mixing bowl. Chop 3 sec / Speed 5. Scrape down the sides of the bowl.
- Add the peeled hard-boiled eggs, orange zest, orange juice, ground cinnamon, mayonnaise, and Dijon mustard to the mixing bowl. Mix 5 sec / Speed 4, or until a chunky paste forms. Transfer the deviled ham spread to a small bowl and set aside.
- Remove the lamb from the marinade. Thread the lamb cubes onto skewers. Heat a grill or a large frying pan over medium-high heat with a little oil. Cook the lamb skewers for 8-12 minutes, turning occasionally, until cooked through and lightly charred. Alternatively, bake in a preheated oven at 200°C (400°F) for 15-20 minutes.
- In the same frying pan (or a separate one), cook the ham steaks over medium heat for 3-4 minutes per side, until heated through and lightly browned.
- Empty and dry the mixing bowl. Add the canned baked beans to the mixing bowl. Heat 5 min / 90°C / Speed 1. Remove the measuring cup and place the simmering basket on the lid to prevent splatter and allow for slight evaporation.
- Serve the grapefruit lamb skewers immediately with the warm baked beans and the zesty deviled ham steaks, topped with the deviled spread.
