Gooey Chocolate Brownie Cake

Ingredients
- 3 large eggs
- 155 g unsalted butter
- 250 g granulated sugar
- 125 g all-purpose flour
- 1 tsp vanilla extract (or 10 g vanilla sugar)
- 30 g unsweetened cocoa powder
- Powdered sugar, for dusting
Instructions
- Preheat oven to 175°C. Line the bottom of a 20-22 cm round cake tin with baking paper and grease the sides.
- Add 155 g unsalted butter to the Thermomix bowl. Melt 3 min / 70°C / Speed 2.
- Add 250 g granulated sugar and 3 large eggs to the bowl. Mix 30 sec / Speed 4. Scrape down the sides of the bowl.
- Add 125 g all-purpose flour, 1 tsp vanilla extract (or 10 g vanilla sugar), and 30 g unsweetened cocoa powder to the bowl. Mix 15 sec / Speed 3, or until just combined. Do not overmix.
- Pour the batter into the prepared cake tin.
- Bake for 20-25 minutes in the preheated oven, or until a skewer inserted into the center comes out with moist crumbs. The baking time will vary depending on how gooey you prefer the inside.
- Let the cake cool completely in the tin on a wire rack.
- Once cooled, sprinkle generously with powdered sugar before slicing and serving. For a firmer texture, chill in the fridge for at least 1 hour before slicing.
