Golden Butter Raspberry Friands

Ingredients
- 160 g unsalted butter
- 100 g plain flour (or gluten-free flour)
- 250 g icing sugar
- 125 g ground almonds
- 6 egg whites (approx. 180-200 g)
- 1 teaspoon vanilla extract
- 125 g fresh raspberries
Instructions
- Preheat the oven to 180°C (355°F) (without fan). Lightly grease a 12-hole friand or muffin tin with a little extra butter or cooking spray.
- Place 160 g unsalted butter into the mixing bowl. Melt and gently brown 8 min / 120°C / Speed 1. Watch carefully to ensure it turns a pale golden colour and smells nutty, but does not burn. Pour the browned butter into a heatproof bowl and set aside to cool slightly.
- Add 100 g plain flour, 250 g icing sugar, and 125 g ground almonds to the mixing bowl. Mix 10 sec / Speed 4. Transfer the dry mixture to a large bowl and set aside.
- Clean and dry the mixing bowl thoroughly. Insert the butterfly whisk. Add 6 egg whites to the mixing bowl. Whisk 2-3 min / Speed 3.5, or until white and frothy.
- Remove the butterfly whisk. Add the reserved dry ingredient mixture, the slightly cooled browned butter, and 1 teaspoon vanilla extract to the mixing bowl with the frothed egg whites. Mix 15 sec / Speed 3, or until just combined. Do not overmix.
- Divide the batter evenly among the prepared moulds, filling each about two-thirds full. Place 2-3 raspberries into the centre of each friand.
- Bake for 20-25 minutes, or until lightly golden and a skewer inserted into the centre comes out clean.
- Let the friands cool in the tin for 5 minutes before carefully transferring them to a wire rack to cool completely.
- Serve warm or cold, optionally dusted with extra icing sugar.
