Fresh Tuna and Potato Salad

Ingredients
- 400 g baby potatoes, halved
- 150 g green beans, trimmed and cut into 3 pieces
- 1 can (approx. 140 g) tuna in water, drained
- 2 plum tomatoes, diced
- 10 g fresh dill, chopped
- 10 g fresh chives, chopped
- 50 g red onion, peeled
- 20 g capers, drained
- 50 g white cheese (e.g., feta), crumbled
- 1 tbsp white wine vinegar
- 2 tsp extra virgin olive oil
- 3 tbsp mayonnaise (plant-based optional)
- Salt, to taste
- Black pepper, to taste
- 500 g water, for steaming
Instructions
- Place 50 g red onion into the mixing bowl. Chop 3 sec / Speed 5. Scrape down sides of the bowl.
- Add 500 g water to the mixing bowl. Place the simmering basket into the bowl and add 400 g halved baby potatoes. Place the Varoma dish on top with 150 g green beans. Steam 20 min / Varoma / Speed 2. Check if vegetables are tender; if not, steam for another 5 minutes. Carefully remove Varoma and simmering basket and set aside to cool slightly. Empty and clean the mixing bowl.
- While the vegetables are steaming, drain the tuna well. Chop 10 g fresh dill and 10 g fresh chives. Dice 2 plum tomatoes.
- Add the chopped red onion, 20 g capers, 1 tbsp white wine vinegar, 2 tsp extra virgin olive oil, 3 tbsp mayonnaise, half of the chopped dill and chives, salt, and pepper to the clean mixing bowl. Mix 10 sec / Speed 3.
- Add the drained tuna, steamed baby potatoes, steamed green beans, and diced plum tomatoes to the mixing bowl. Gently combine 15 sec / Reverse / Speed 2, ensuring not to overmix and break the vegetables.
- Divide the salad among serving plates. Crumble 50 g white cheese over the top and garnish with the remaining fresh dill and chives before serving.
