Fragrant Lamb Rogan Josh with Basmati Rice and Cucumber Raita

Ingredients
- 600 g lamb shoulder, trimmed of excess fat and cut into 3-4 cm cubes
- 30 g ghee or vegetable oil
- 200 g brown onion, quartered
- 20 g fresh ginger, peeled
- 20 g garlic, peeled
- 2 green cardamom pods
- 2 cloves
- 1 small cinnamon stick (approx. 3 cm)
- 1 tbsp Kashmiri chili powder (or regular chili powder for less heat)
- 1 tsp ground turmeric
- 1 tbsp ground cumin
- 1.5 tbsp ground coriander
- 1 tsp garam masala
- 50 g tomato paste
- 300 g water or lamb stock
- 1.5 tsp salt, or to taste
- 150 g plain full-fat yogurt (or dairy-free coconut yogurt for dairy-free option)
- 20 g fresh coriander, chopped, plus extra for garnish
- For the Basmati Rice:
- 250 g basmati rice, rinsed
- 1000 g water
- 0.5 tsp salt
- For the Cucumber Raita:
- 1 large cucumber (approx. 200g), peeled and diced
- 50 g red onion, finely diced
- 150 g plain full-fat yogurt (or dairy-free coconut yogurt)
- 10 g fresh mint or coriander, chopped
- 1 tbsp lemon juice
- Salt and black pepper to taste
Instructions
- Place onion, ginger, and garlic into the mixing bowl. Chop 5 sec / Speed 5. Scrape down the sides of the mixing bowl.
- Add ghee or oil, cardamom pods, cloves, and cinnamon stick. Sauté 8 min / 120°C / Speed 1 (Reverse). Remove the measuring cup and place the simmering basket on the lid to allow for evaporation.
- Add Kashmiri chili powder, turmeric, cumin, coriander, and garam masala. Sauté 2 min / 120°C / Speed 1 (Reverse).
- Add lamb cubes to the mixing bowl. Brown 5 min / 120°C / Speed 1 (Reverse).
- Add 300 g water or stock and 1.5 tsp salt. Insert the simmering basket into the mixing bowl. Add 1000 g water and 0.5 tsp salt to the simmering basket. Place the rinsed basmati rice into the simmering basket. Cook 35 min / 95°C / Speed 2 (Reverse). Ensure the simmering basket is properly seated on the lid to prevent splatter.
- After 35 minutes, carefully remove the simmering basket with the cooked rice and set aside, covered, to keep warm. Pause the curry cooking. Scrape down the sides and bottom of the mixing bowl with the spatula. Check the consistency of the curry; if too thick, add up to 50 g more water or stock.
- Add plain yogurt and 20 g chopped fresh coriander to the curry. Cook 20 min / 90°C / Speed 2 (Reverse). Remove the measuring cup and place the simmering basket on the lid to allow for evaporation. This step helps to prevent curdling of the yogurt and allows the flavors to meld.
- While the curry finishes cooking, prepare the Cucumber Raita. In a separate bowl, combine diced cucumber, finely diced red onion, plain yogurt, chopped mint or coriander, and lemon juice. Season with salt and black pepper to taste. Mix well and set aside.
- Once the curry cooking is complete, perform a final stir 1 min / 90°C / Speed 1 (Reverse) to ensure even distribution and prevent sticking.
- Serve the Lamb Rogan Josh hot with the fluffy basmati rice and a side of refreshing Cucumber Raita. Garnish with extra fresh coriander if desired.
