Ingredients
- 250 g all-purpose flour
- 30 g granulated sugar (optional)
- 10 g baking powder
- 2 g salt
- 2 large eggs
- 400 ml oat milk
- 30 g neutral oil (e.g., sunflower or canola) or melted vegan butter, plus extra for frying
- Optional toppings: powdered sugar, fresh berries, maple syrup
Instructions
- Add flour, sugar (if using), baking powder, and salt to the Thermomix bowl. Mix 10 sec / Speed 4.
- Add eggs, oat milk, and 30 g neutral oil (or melted vegan butter) to the bowl. Mix 20 sec / Speed 5, or until a smooth batter forms. Scrape down the sides of the bowl with the spatula if needed and mix again for 5 sec / Speed 5.
- Transfer the batter to a jug or bowl. Let it rest for 10-15 minutes at room temperature. This helps the flour hydrate and makes for fluffier pancakes.
- Heat a large non-stick frying pan over medium heat. Lightly grease the pan with a little extra oil or vegan butter.
- Pour about 60-80 ml (1/4 cup) of batter per pancake into the hot pan. Cook for 2-3 minutes per side, or until golden brown and cooked through.
- Repeat with the remaining batter, adding more oil to the pan as needed.
- Serve immediately with your favourite toppings such as powdered sugar, fresh berries, or maple syrup.
