Fluffy High-Protein Pancakes

Ingredients
- 100 g all-purpose flour
- 30 g protein powder (vanilla or unflavored)
- 1 tbsp baking powder
- Pinch of salt
- 2 large eggs
- 180 ml milk (dairy or non-dairy)
- 1 tbsp maple syrup or sweetener of choice (optional)
- 1 tsp vanilla extract (optional)
- Oil or butter, for cooking
Instructions
- Add 100 g all-purpose flour, 30 g protein powder, 1 tbsp baking powder, and a pinch of salt to the Thermomix bowl. Mix 5 sec / Speed 4.
- Add 2 large eggs, 180 ml milk, 1 tbsp maple syrup (if using), and 1 tsp vanilla extract (if using) to the bowl. Mix 20 sec / Speed 4, or until just combined and smooth. Scrape down the sides of the bowl with a spatula if needed and mix again for 5 sec / Speed 4.
- Let the batter rest in the bowl for 5-10 minutes while you prepare your frying pan. This allows the baking powder to activate and the flour to hydrate, resulting in fluffier pancakes.
- Heat a non-stick frying pan over medium heat and lightly grease with oil or butter.
- Pour about 60 ml (1/4 cup) of batter per pancake onto the hot pan. Cook for 2-3 minutes per side, or until golden brown and cooked through.
- Repeat with the remaining batter, greasing the pan lightly between batches if necessary.
- Serve immediately with your favorite toppings such as fresh berries, extra maple syrup, yogurt, or nuts.
