  1. Preheat oven to 200°C (400°F) or prepare your air fryer. Line a baking tray with parchment paper.
  2. Place onion, 2 cloves garlic, parsley, and cilantro into the mixing bowl. Chop 5 sec / Speed 7. Scrape down the sides of the bowl.
  3. Add drained chickpeas, cumin, coriander, 1/2 tsp salt, black pepper, baking powder, and chickpea flour to the bowl. Process 15-20 sec / Speed 7, or until a coarse, crumbly mixture forms. Do not over-process; it should not be a paste.
  4. Transfer the falafel mixture to a separate bowl. Take about 1 tablespoon of the mixture, flatten it in your palm, place a small amount of crumbled feta in the center, and carefully form it into a ball, ensuring the feta is fully enclosed. Repeat with the remaining mixture and feta (you should get about 16-20 falafel balls).
  5. Arrange the falafel balls on the prepared baking tray or in the air fryer basket. Lightly brush each falafel with olive oil.
  6. Bake for 20-25 minutes, flipping halfway through, until golden brown and crispy. If using an air fryer, cook at 180°C (350°F) for 15-20 minutes, shaking the basket occasionally.
  7. While falafel bakes, prepare the tahini sauce. Add Greek yogurt, tahini, lemon juice, 1 clove garlic, cold water, and a pinch of salt to the clean mixing bowl. Mix 10 sec / Speed 4.
  8. Check the consistency of the sauce; if too thick, add a little more water and mix 5 sec / Speed 4. Transfer to a small serving bowl.
  9. Warm the pita breads according to package instructions.
  10. Serve the warm feta stuffed falafel in pita bread with lettuce, sliced red onion, extra fresh herbs, and a generous drizzle of creamy tahini sauce.
