Feta Stuffed Falafel with Creamy Tahini Sauce

Ingredients
- 400 g canned chickpeas, drained and rinsed
- 1 small onion, quartered
- 2 cloves garlic
- 30 g fresh parsley, leaves and tender stems
- 30 g fresh cilantro, leaves and tender stems
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp baking powder
- 20 g chickpea flour (or all-purpose flour)
- 100 g feta cheese, crumbled, for stuffing
- 20 g olive oil, for brushing
- 100 g Greek yogurt
- 30 g tahini
- 15 g lemon juice
- 1 clove garlic (for sauce)
- 30 g cold water
- Pinch of salt (for sauce)
- 4 pita breads
- Lettuce leaves
- 1/2 red onion, thinly sliced
- Extra fresh herbs, for garnish
Instructions
- Preheat oven to 200°C (400°F) or prepare your air fryer. Line a baking tray with parchment paper.
- Place onion, 2 cloves garlic, parsley, and cilantro into the mixing bowl. Chop 5 sec / Speed 7. Scrape down the sides of the bowl.
- Add drained chickpeas, cumin, coriander, 1/2 tsp salt, black pepper, baking powder, and chickpea flour to the bowl. Process 15-20 sec / Speed 7, or until a coarse, crumbly mixture forms. Do not over-process; it should not be a paste.
- Transfer the falafel mixture to a separate bowl. Take about 1 tablespoon of the mixture, flatten it in your palm, place a small amount of crumbled feta in the center, and carefully form it into a ball, ensuring the feta is fully enclosed. Repeat with the remaining mixture and feta (you should get about 16-20 falafel balls).
- Arrange the falafel balls on the prepared baking tray or in the air fryer basket. Lightly brush each falafel with olive oil.
- Bake for 20-25 minutes, flipping halfway through, until golden brown and crispy. If using an air fryer, cook at 180°C (350°F) for 15-20 minutes, shaking the basket occasionally.
- While falafel bakes, prepare the tahini sauce. Add Greek yogurt, tahini, lemon juice, 1 clove garlic, cold water, and a pinch of salt to the clean mixing bowl. Mix 10 sec / Speed 4.
- Check the consistency of the sauce; if too thick, add a little more water and mix 5 sec / Speed 4. Transfer to a small serving bowl.
- Warm the pita breads according to package instructions.
- Serve the warm feta stuffed falafel in pita bread with lettuce, sliced red onion, extra fresh herbs, and a generous drizzle of creamy tahini sauce.
