Double Chocolate Chip Cookies

Ingredients
- 150 g all-purpose flour
- 20 g Dutch process cocoa powder
- 7.5 g baking powder (approx. 1/2 Tbsp)
- 3 g salt (approx. 1/2 tsp)
- 113 g unsalted butter
- 95 g light brown sugar, lightly packed
- 100 g granulated sugar
- 1 large egg, room temperature
- 1 large egg yolk, room temperature
- 170 g milk chocolate chips
- Pinch of sea salt flakes, for topping
Instructions
- Preheat the oven to 177°C (350°F) convection or 163°C (325°F) conventional. Line three cookie sheets with parchment paper.
- Add the all-purpose flour, cocoa powder, baking powder, and salt to the Thermomix bowl. Mix 5 sec / Speed 5. Transfer the dry ingredients to a separate bowl and set aside.
- Add the unsalted butter to the Thermomix bowl. Melt 3 min / 60°C / Speed 2.
- Add the light brown sugar, granulated sugar, large egg, and large egg yolk to the Thermomix bowl with the melted butter. Mix 15 sec / Speed 4 until smooth and well combined.
- Add the reserved dry ingredients back into the Thermomix bowl. Mix 10 sec / Speed 3 / Reverse to combine, scraping down the sides if needed. Do not overmix.
- Add the milk chocolate chips to the Thermomix bowl. Mix 5 sec / Speed 2 / Reverse to gently incorporate.
- Using a small cookie scoop, scoop out 18 rounds of dough, placing 6 per prepared cookie sheet. Bake for 10 minutes, or until the edges feel set and the center is still slightly soft.
- Immediately after baking, top the warm cookies with a pinch of sea salt flakes. Allow them to cool on the pan for 10 minutes before transferring to a wire rack to cool completely.
- Serve warm or at room temperature.
