Crispy Potato Croquettes

  1. Add 500 g water to the mixing bowl. Place the simmering basket with the peeled and cut potatoes into the mixing bowl. Cook 20 min / Varoma / Speed 1.
  2. Carefully remove the simmering basket with the cooked potatoes and set aside to drain. Discard the water from the mixing bowl.
  3. Add the cooked potatoes to the mixing bowl. Mash 10 sec / Speed 4. Transfer the mashed potatoes to a separate bowl and set aside.
  4. Without cleaning the mixing bowl, add 30 g butter and 30 g plain flour. Cook 2 min / 100°C / Speed 1 to make a roux.
  5. Add 250 ml milk, 1/2 tsp salt, 1/4 tsp black pepper, and a pinch of nutmeg to the mixing bowl. Cook 4 min / 90°C / Speed 3 to create a thick béchamel sauce.
  6. Add the mashed potatoes back into the mixing bowl with the béchamel sauce. Mix 20 sec / Speed 3 / Reverse until well combined. Ensure no lumps remain.
  7. Transfer the potato mixture to a shallow dish, cover with cling film directly on the surface to prevent a skin from forming, and chill in the refrigerator for at least 30 minutes (or up to 2 hours) until firm enough to handle.
  8. Prepare three shallow dishes: one with 50 g plain flour, one with the beaten eggs, and one with 150 g breadcrumbs.
  9. Take portions of the chilled potato mixture (about 30-40 g each) and shape them into cylinders, approximately 5-6 cm long and 2 cm thick.
  10. Roll each croquette first in flour, then dip in beaten egg, and finally coat thoroughly in breadcrumbs, pressing gently to ensure an even layer.
  11. Preheat your air fryer to 190°C (375°F) or oven to 200°C (400°F). Lightly spray the croquettes with oil.
  12. Air fry for 10-15 minutes, turning halfway, until golden brown and crispy. If baking, place on a baking sheet and bake for 20-25 minutes, turning halfway, until golden and crisp.
  13. Serve immediately as a side dish or snack.
