Crispy Homemade Cheese Crackers

Ingredients
- 150 g cheddar cheese, cut into 2-3 cm cubes
- 150 g plain flour
- 75 g cold unsalted butter, cut into small cubes
- 1/2 tsp salt
- 1/4 tsp paprika (optional)
- 30-50 g cold water (start with 30g and add more if needed)
Instructions
- Preheat oven to 180°C (350°F). Line two baking trays with baking paper.
- Add cheddar cheese to the clean and dry Thermomix bowl. Grate 10 sec / Speed 8. Scrape down sides of bowl.
- Add flour, cold butter, salt, and paprika (if using) to the bowl. Mix 10 sec / Speed 6 until a crumbly mixture forms.
- Add 30 g cold water to the bowl. Knead 1 min / Dough mode. Check consistency; if the dough is too dry, add 10-20 g more cold water and knead for another 30 sec / Dough mode until a cohesive ball forms. The dough should be firm but pliable.
- Remove the dough from the bowl, flatten slightly, wrap in cling film, and refrigerate for 15 minutes.
- On a lightly floured surface, roll out the dough thinly (about 2-3 mm thick).
- Using a cookie cutter or a knife, cut the dough into desired cracker shapes (e.g., squares, circles). Place the crackers on the prepared baking trays.
- Bake for 12-15 minutes, or until golden brown and crispy. Baking time may vary depending on thickness and oven.
- Remove from oven and let cool completely on a wire rack before serving. They will crisp up further as they cool.
