Creamy Vegan Rice Pudding

Ingredients
- 720 ml unsweetened non-dairy milk (e.g., soy or almond)
- 240 ml full-fat coconut milk (from a can)
- 200 g uncooked medium grain white rice
- 75 g raisins
- 80 g maple syrup, plus more to taste
- 5 ml vanilla extract
- 1 tsp orange zest
- 1 tsp ground cinnamon
- 0.5 tsp ground nutmeg
- 30 g vegan butter
- 0.5 tsp salt, or to taste
Instructions
- Add 720 ml non-dairy milk, 240 ml coconut milk, 200 g white rice, 75 g raisins, 80 g maple syrup, 5 ml vanilla extract, 1 tsp orange zest, 1 tsp ground cinnamon, and 0.5 tsp ground nutmeg to the Thermomix bowl.
- Place the simmering basket on top of the lid instead of the measuring cup to prevent splatter and allow for evaporation.
- Cook for 20 minutes / 90°C / Speed 2 / Reverse.
- Pause, scrape down the sides and bottom of the Thermomix bowl with the spatula to ensure even cooking and prevent sticking. Check the consistency and adjust liquid if needed (add a splash of non-dairy milk if too thick).
- Continue cooking for another 3 minutes / 90°C / Speed 2 / Reverse.
- Add 30 g vegan butter and 0.5 tsp salt to the bowl.
- Mix for 1 minute / 90°C / Speed 1 / Reverse to incorporate the butter and salt and settle the pudding.
- Taste the rice pudding and add more maple syrup or salt if desired. Mix briefly for 10 seconds / Speed 1 / Reverse.
- Transfer the rice pudding to serving bowls. Let it cool for a bit, then serve warm or chill for later.
