- 75 g raisins
- 60 ml maple syrup, plus more to taste
- 5 ml vanilla extract
- 2 g orange zest (from 1 small orange)
- 2 g ground cinnamon
- 1 g ground nutmeg
- 30 g vegan butter
- 3 g salt, or to taste
Instructions
- Add 720 ml non-dairy milk, 240 ml coconut milk, 200 g medium grain white rice, 75 g raisins, 60 ml maple syrup, 5 ml vanilla extract, 2 g orange zest, 2 g ground cinnamon, and 1 g ground nutmeg to the Thermomix bowl.
- Cook for 20 minutes / 90°C / Speed 2 (Reverse), placing the simmering basket on the lid instead of the measuring cup to allow for evaporation and prevent splatter. This is a thick, starchy dish, so constant stirring in reverse mode is crucial to prevent burning.
- Pause, scrape down the sides and bottom of the Thermomix bowl with the spatula. Check the consistency and add a splash more non-dairy milk if you prefer a thinner pudding.
- Add 30 g vegan butter and 3 g salt to the bowl. Cook for another 3 minutes / 90°C / Speed 2 (Reverse).
- Taste the pudding and add more maple syrup or salt if desired. Mix for 10 seconds / Speed 2 (Reverse) to incorporate.
- Serve warm or transfer to a serving dish and let cool completely before chilling in the refrigerator. The pudding will thicken further as it cools.
