Creamy Tomato Soup

Ingredients
- 1 onion, quartered (approx. 150 g)
- 2 cloves garlic
- 20 g olive oil
- 800 g canned chopped tomatoes
- 500 g vegetable stock
- 1 tsp dried basil (or a handful of fresh basil leaves)
- ½ tsp sugar
- ½ tsp salt, or to taste
- ¼ tsp black pepper, or to taste
- 100 g cooking cream (or coconut cream for a dairy-free option)
- Fresh basil leaves, for garnish (optional)
Instructions
- Place onion and garlic in the mixing bowl. Chop 5 sec / Speed 5.
- Scrape down the sides of the mixing bowl. Add olive oil. Sauté 5 min / 120°C / Speed 1.
- Add canned chopped tomatoes, vegetable stock, dried basil (or fresh), sugar, salt, and pepper to the mixing bowl. Cook 15 min / 100°C / Speed 1. Place the simmering basket on the lid instead of the measuring cup to prevent splashes and allow for some evaporation.
- Carefully remove the simmering basket. Blend 1 min / Speed 7, gradually increasing the speed from 4 to 7 to achieve a smooth consistency.
- Add cooking cream to the mixing bowl. Heat 2 min / 90°C / Speed 2 (Reverse) to gently warm through and combine.
- Taste and adjust seasoning if needed. Serve hot, garnished with fresh basil leaves if desired.
