Creamy Tomato Pasta with Spinach

Ingredients
- 1 onion, halved
- 2 cloves garlic
- 20 g olive oil
- 100 g tomato paste
- 400 g chopped tomatoes (canned)
- 500 g vegetable stock
- 200 g water
- 1 tsp salt
- ½ tsp black pepper
- 250 g short pasta (e.g., penne, fusilli)
- 100 g fresh spinach
- 50 g cream (or crème fraîche)
- 50 g Parmesan cheese, grated (plus extra for serving)
Instructions
- Add onion and garlic to the mixing bowl. Chop 3 sec / Speed 5. Scrape down the sides of the bowl with a spatula.
- Add olive oil. Sauté 3 min / 120°C / Speed 1.
- Add tomato paste. Sauté 2 min / 120°C / Speed 1.
- Add chopped tomatoes, vegetable stock, water, salt, and pepper. Place the simmering basket on the lid instead of the measuring cup to allow for evaporation. Bring to a boil 5 min / 100°C / Speed 1.
- Add pasta. Cook according to package instructions minus 2 minutes (e.g., if package says 10 min, cook for 8 min) / 100°C / Reverse / Speed 1.
- Pause the machine after half of the pasta cooking time (e.g., after 4 minutes for an 8-minute cook). Scrape down the sides and bottom of the bowl with a spatula, ensuring pasta is submerged and moving freely. Adjust liquid if needed by adding a splash of hot water if the mixture appears too dry. Continue cooking.
- Add fresh spinach and cream to the bowl. Cook 2 min / 90°C / Reverse / Speed 1.
- Add grated Parmesan cheese. Mix 30 sec / 90°C / Reverse / Speed 1 to combine and prevent sticking.
- Serve immediately with extra Parmesan cheese, if desired.
