Ingredients
- 50 g onion, peeled and quartered
- 5 g garlic, peeled (1-2 cloves)
- 20 g olive oil
- 30 g tomato paste
- 200 g canned crushed tomatoes
- 300 g vegetable stock or water
- ½ tsp salt
- ¼ tsp black pepper
- 150 g short pasta (e.g., penne, fusilli)
- 50 g cooking cream (or dairy-free alternative)
- 30 g Parmesan cheese, grated (plus extra for serving)
- Fresh basil leaves, for garnish
Instructions
- Place onion (50 g) and garlic (5 g) into the mixing bowl. Chop 3 sec / Speed 5. Scrape down the sides of the mixing bowl with the spatula.
- Add olive oil (20 g). Sauté 5 min / 120°C / Speed 1.
- Add tomato paste (30 g). Cook 2 min / 100°C / Speed 1.
- Add crushed tomatoes (200 g), vegetable stock (300 g), salt (½ tsp), and black pepper (¼ tsp). Cook 8 min / 98°C / Speed 2 (Reverse). Place the simmering basket on the lid instead of the measuring cup to allow for evaporation and prevent splattering.
- Add short pasta (150 g) to the mixing bowl. Cook according to package instructions (typically 10-12 min) / 100°C / Speed 1 (Reverse). Check pasta for doneness and consistency. If the sauce becomes too thick or liquid level is too low, add 50-100 g more hot water or stock.
- Add cooking cream (50 g) and grated Parmesan cheese (30 g). Cook 1 min / 90°C / Speed 2 (Reverse) to combine and finish the sauce.
- Transfer the creamy tomato pasta to serving bowls. Garnish with fresh basil leaves and extra grated Parmesan cheese, if desired. Serve immediately.
