Creamy Tomato Pasta

Ingredients
- 1 small onion (approx. 100 g), peeled and quartered
- 1 clove garlic, peeled
- 20 g olive oil
- 30 g tomato paste
- 400 g canned crushed tomatoes
- 350 g vegetable stock
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 250 g short pasta (e.g., penne, fusilli)
- 100 g cooking cream (single cream)
- 50 g Parmesan cheese, grated, plus extra for serving
- Fresh basil leaves, for garnish (optional)
Instructions
- Add onion and garlic to the mixing bowl. Chop 5 sec / Speed 5. Scrape down the sides of the bowl.
- Add olive oil. Sauté 3 min / 120°C / Speed 1.
- Add tomato paste. Sauté 2 min / 120°C / Speed 1. This helps to deepen the tomato flavor.
- Add crushed tomatoes, vegetable stock, dried oregano, salt, and pepper to the mixing bowl. Mix 10 sec / Speed 3 to combine.
- Cook the sauce for 5 min / 100°C / Speed 1. Place the simmering basket on the lid instead of the measuring cup to prevent splattering and allow for some evaporation.
- Add the short pasta to the mixing bowl. Cook for the time indicated on the pasta package (typically 10-12 minutes) / 100°C / Reverse / Speed 1. Ensure the pasta is submerged in the liquid.
- Pause after half the cooking time (approx. 5-6 minutes). Scrape down the sides and bottom of the bowl with the spatula to ensure even cooking and prevent sticking. Check the liquid level and add a splash more hot water if the pasta seems too dry, then continue cooking.
- Once the pasta is cooked al dente, add cooking cream and grated Parmesan cheese. Cook 2 min / 90°C / Reverse / Speed 1-2 to combine and thicken slightly.
- Check seasoning and adjust if necessary. Serve immediately, garnished with fresh basil and extra Parmesan cheese if desired.
