Thermomix recipe: Creamy Tomato Pasta. Ready in 30 minutes. Serves 4. Step-by-step Thermomix instructions on Chef Amai.
Ingredients
- 1 onion, halved
- 2 cloves garlic
- 20 g olive oil
- 10 g tomato paste
- 400 g canned chopped tomatoes
- 500 g vegetable stock (or water)
- 250 g dried short pasta (e.g., penne, fusilli)
- 1 tsp salt
- 0.5 tsp black pepper
- 1 tsp dried oregano or Italian herbs
- 100 g cooking cream
- 50 g Parmesan cheese, grated
- Fresh basil for garnish (optional)
Instructions
- Add onion and garlic to the mixing bowl. Chop 3 sec / Speed 5. Scrape down sides of the bowl with the spatula.
- Add olive oil. Sauté 3 min / 120°C / Speed 1 (Reverse).
- Add tomato paste. Cook 2 min / 120°C / Speed 1 (Reverse).
- Add canned chopped tomatoes, vegetable stock, salt, pepper, and dried oregano. Cook 5 min / 100°C / Speed 1 (Reverse). Place the simmering basket on the lid instead of the measuring cup to prevent splatter.
- Add dried pasta. Cook for the time indicated on the pasta package + 2 minutes / 100°C / Speed 1 (Reverse). Ensure the pasta is submerged in the liquid. Place the simmering basket on the lid.
- Pause the machine. Scrape down the sides and bottom of the bowl with the spatula to ensure no pasta is sticking. Check the liquid level and add a splash more stock or water if it looks too dry. Continue cooking.
- Once the pasta is cooked, add cooking cream and grated Parmesan cheese. Mix 1 min / 90°C / Speed 2 (Reverse).
- Serve immediately, garnished with fresh basil if desired. Last 1-2 min: 90°C | Speed 1-2 (Reverse) to settle and prevent sticking.
